Budget doesn’t have to mean bland or boring and I’m going to show you how! I have compiled a tasty weekly menu plan for you that should delight your tastebuds & your wallet. Not to mention the added bonus of being nice for your waistline! Most of the menus combine foods so that you are working smarter & not harder in the kitchen (something I always strive to do). Remember cooking should be fun and tailored to your taste palette so if there are ingriedients in this menu plan that you’re not crazy about, simply swap them out! Easy Peasy! Now if only there was something I could do to help you with the dishes LOL!

Shrimp Avocado Sammie
from Bell’alimento
Ingredients:
1 lb shrimp (frozen or fresh) – cleaned, w/shells & tails removed
1 avocado – sliced thin
1 clove fresh garlic – minced
1/4 cup of real mayonnaise
1/2 pickle – chopped fine
fresh cilantro – chopped fine
1 lime
1 package of hoagie rolls
extra virgin olive oil
1 tbsp unsalted butter
kosher salt
Shrimp Linguine
From Bell’alimento
Ingredients:
1 box Linguine – I like Barilla
1/2 stick of unsalted real butter
1/2 cup extra-virgin olive oil
2 small – medium shallots – minced (If you don’t have shallots you can use 1 small onion)
3-4 cloves of fresh garlic – minced
1/4 tsp. red pepper flakes (if you like spicy add a little more, if you don’t like spicy leave it out!)
1 bag of medium to large shrimp – peeled
Kosher salt & freshly ground black pepper
1/2 cup dry white wine – I use Chardonnay
1 lemon – juiced
Fresh parmigiano regiano for garnishing
Fresh parsley for garnish – roughly chopped – Optional
Gigi’s Monte Carlo Sammie

Ingredients:
Focaccia Bread
1/2 lb of thinly sliced deli Ham
1 fennel bulb – cored & sliced thin
1 zucchini – sliced thin
1 small package of chopped walnuts
1 bunch of fresh mint
1 lemon juice
1-2 avocados
s/p
extra virgin olive oil
Roasted Garlic Lime Chicken
From Bell’alimento
Ingredients:
1 whole chicken
2 limes – cut in half
2 heads of garlic – YES heads NOT cloves (trust me, you’ll see)
1 stick butter – melted
salt & pepper (s/p)
1 large onion – sliced thick
carrots – sliced into about 2-3? sections
potatoes – I use the small yukon gold & cut them in half, leaving skins on
Use enough veggies to fill the roaster pan around your chicken
Summery Chicken Salad

Ingredients:
3-4 chicken breasts – cooked & cubed (enough for your family)
1 apple – diced
1 small box of raisins
1 can of pineapple chunks – drained
1/4 cup mayonnaise
1 tsp. curry powder
Salmon with Honey Mustard Glaze

Ingredients:
4 Salmon Steaks
1 1/2 tbsp ground stone mustard
3 tbsp honey
2 tbsp unsalted butter – melted
Grilled Eggplant Sammie w/Tomato, Ricotta Salsa

Ingredients:
1 large eggplant – skin removed & sliced horizontally to about 1/2? thickness
8-10 roma tomatoes – halved
1 cup of ricotta cheese – room temperature
1 small red onion or vidalia onion – chopped finely
extra virgin olive oil
red pepper flakes
2 tbsp. balsamic vinegar
fresh basil leaves – chopped roughly
Napa Valley Stuffed Pork Tenderloin

Ingredients:
Pork Tenderloin
package of fresh spinach
10-12 sun dried tomatoes – chopped
2 cloves of fresh garlic – minced
package of Portabella mushrooms – sliced
2 cups of chicken stock
1 small onion – chopped fine
3 tbsp unsalted butter
extra virgin olive oil
cornstarch – for thickening sauce (equal parts water to cornstarch)
Strawberry Nutella Panino

Fresh Sliced Strawberries
Fresh Mint – Just a leaf or two
Italian Bread – I used my homemade Ciabatta bread & it was scrumptious!

Ingredients:
1 can of chickpeas, liquid reserved
1/4 cup olive oil
1/2-1 medium onion, chopped
1/2 large tomato, skinned and finely chopped, other half sliced
1 clove garlic, minced
1/2 medium to large potato, peeled, in 1/8-inch slices
1/4 tsp paprika
1 cup short-grain rice
Pinch Saffron
Salt
1 head garlic, unpeeled, in one piece
2 oz. morcilla in 1/4 inch slices (optional)
Zucchini Salad

Ingredients:
4 to 6 Medium Zucchini
1/4 Cup Olive Oil
2 Garlic Cloves, Peeled And Thinly Sliced
1 to 2 Tablespoons Red Wine Vinegar
Sea Salt & Cracked Black Pepper
1/4 Cup Chopped Fresh Herb Of Choice (I Prefer Parsley or Mint)
1 Ounce Shaved Pecorino Cheese
Grilled Pizza

1/4 c. plus 2 TBL water, warm
2 tsp yeast
3/4 c. milk
1-1/2 TBL EVOO
1 tsp salt
3 c. all-purpose flour
Semolina or cornmeal for sprinkling

1 tsp dry oregano
1 tsp dry rosemary
