Well, it looks like St. Patrick’s Day is upon us again. A lot of you are probably planning on making some corned beef and cabbage. Supermarket corned beef can terribly salty. If you have the time, you can try corning your own beef (see here, here, or here). Better get started quick since it usually takes 2-3 days to cure the beef. If you don’t have time to corn your own beef, try checking out a trustworthy deli or butcher to see if they can provide you with something better.
If you’re looking for other dishes to serve, here are some ideas:
- Irish Stew. If you’re a lamb fan, this might make a better main course than the corned beef.
- Dublin Coddle. This is a simple dish of sausage, bacon, and potatoes simmered in broth.
- Black Pudding. Adventurous eaters might want to try something with this sausage made from congealed pigs blood.
- Irish Soda Bread. This rustic bread would be great for sopping up Irish Stew or corned beef and cabbage.
- Colcannon. Colcannon is a hearty casserole of mashed potatoes mixed with other vegetables like cabbage.
- Boxty. A boxty is the Irish take on a potato pancake.
- Irish Tea Cakes. For dessert, you might want to try an Irish Tea Cake or Irish Whiskey Cake. You can also try experimenting with Bailey’s Irish Cream for more dessert ideas.
